Spring is in the air, and that calls for two things: nice weather and good cooking. Since this is Indiana, the nice weather is tentative, but good cooking can be easily accomplished.
The tasty spring recipe I decided to make does come from a cookbook I recently bought. I am not sure what it is about them, but I highly recommend buying cookbooks and just flipping through the pages. It is oddly calming, at least for me. Going one step further and baking from a cookbook is reaching new heights, though, and I will take you all there today with some delicious cake cookies.
The recipe I chose is a lemon flavor based dessert, which is such a fun spring flavor because it is sweet but still has a little bit of tang that I really enjoy. This is a super simple recipe that even I could follow, so I am sure others can as well.
The only ingredients needed are a box of lemon cake mix, any brand will do, two eggs, 1/3 cup of vegetable oil, one lemon, and 1/3 cup of powdered sugar.
Simply mix together the cake mix, eggs, and vegetable oil until they are completely blended. Then, add in 2 tablespoons of lemon juice and just a bit of grated lemon rind, and mix. Finally, roll tablespoon size balls of dough into powdered sugar in a separate bowl and bake at 375 degrees for six to nine minutes on a cookie sheet.
I found it was easiest to separate the cookies into two batches so that there was no chance of the cookies merging together while baking. I also found clean up can be easier if parchment paper is laid down on the cookie sheets before the dough is put on and into the oven.
“ I loved these lemon cookies,” said Lexi Price, 12. “They had just the right amount of sweet and sour, I could easily eat a whole batch on my own.”
These lemon cake cookies are such an easy treat and were a hit among friends. They are sure to be popular at any gathering.
