Gingerbread Cheesecake

This recipe is a little more time consuming than some people might wish, but the delicious product is well worth the time. On top of all of the ingredients listed below, you will also need a package of gingerbread cookies. Little Debbie has a box that you can purchase at your local Kroger or Meijer that work perfectly.

The first step to making this deliciously festive treat is to make the cheesecake batter.

 

  • 4 packages of cream cheese (softened)
  • 1 ½ cups of white sugar
  • ¾ cup of milk
  • 1 cup sour cream
  • 1 TBS vanilla
  • ¼ cup of flour
  • 1 cup sour cream

To make the cheesecake batter, first mix the cream cheese with sugar in a large bowl until smooth. Next, blend in the milk, and then one at a time,  mix in the eggs. Lastly, add in sour cream, vanilla, and flour until it is creamy.

The last step for the batter is to add 2 tablespoons of gingerbread creamer into the batter. To make the creamer homemade, use the recipe and instructions below:

 

  • 2 cups half-and-half
  • 1/4 cup unsulphured molasses
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract

 

To make this creamer, first, you will whisk the half-and-half, molasses, ginger, cinnamon, cloves, and nutmeg together in a bowl. Next, transfer the mix into a saucepan and heat the mixture on a low heat setting until it simmers. When it simmers, add the vanilla extract in. After this, let the creamer cool in the fridge for 10 minutes. (Note that this creamer is only good to be refrigerated for about a week).

Now that you’ve made your creamer, add 2 tablespoons of the it into the cheesecake batter. Form the cheesecake batter into individual balls, just about the size of a ping pong ball. After this, put them in the freezer to chill.
The final step to completing these treats, is to crush the gingerbread cookies into dust to coat your bites in. The easiest way to make this mess free is to place the cookies into a ziplock bag and smash them up using a rolling pin. Then, drop the cheesecake bites into the bag and roll them around until covered.

After you’ve completed this step, you have finally finished making your scrumptious Christmas goodies.

These are very easy to make, the only factor that takes time is the time that the batter takes to freeze. I think that they’re a nice holiday treat and they remind me of Christmas because of their nice gingerbread flavor.
