Cookies are one of the best fall treats. They are warm and perfect for a cold night inside. Regular chocolate chip cookies are good, but to make them more appropriate for fall, make the dough pumpkin flavored.
First, mix 1/2 cup or 8 tablespoons of unsalted butter, 1/2 cup of granulated sugar, and 1/4 cup of brown sugar. Make sure that the brown sugar is tightly packed in the cup. Combine these ingredients either with a whisk or an electric mixer. While mixing, add one teaspoon of vanilla extract and 6 tablespoons of pumpkin puree.
Next, in another bowl, mix together 1 and 1/2 cups of flour, 1/4 teaspoon of salt, 1/4 teaspoon of baking powder, 1/4 teaspoon of baking soda, 1 and 1/2 teaspoons of ground cinnamon and 1 teaspoon of pumpkin pie spice. A side note is that the flour can be gluten-free or all-purpose.
Then, add both of these mixtures together to form the dough. Add 1/2 cup of semi-sweet chocolate chips to this and fold it with a scraper. A scraper is a plastic or silicon-bladed tool that has a straight edge on one side and a curved side on the other. It is used for scraping, mixing, and folding ingredients when baking.
After this is done, chill the dough for 30 minutes. This will help the dough be formed into balls before baking. Later, take the dough out and preheat the oven to 350 degrees. This step might be better to do when first making the dough depending on how long the oven takes to preheat. Put parchment paper on a baking sheet.
Subsequently, scoop out the dough either with a cookie scoop or a small ice cream scooper. Try to take the dough amounts similarly. Roll the dough between your hands to form balls. Place the balls on the baking sheet and put them in the oven.
Finally, cook the dough for 10-12 minutes. A tip would be to start at 10 minutes, and once that is done, use a toothpick or knife to check the middle. If there is dough on the knife, it needs to go in longer, but if there is none, the cookies are ready to be taken out. Once they are out of the oven, let them cool for about 10 minutes, and enjoy.
