Barbecue tacos have become popular over time; many people have created different variations to these delicious Tex-Mex style tacos. Making them is very simple, cooking up a quick and easy meal.
First, choose the protein or meat. Most recipes use brisket and pulled pork, but others use grilled shrimp or tofu. I enjoy using pulled pork, since the flavor seems to pop along with other foods. It is recommended to season the meat with spices like pepper, chili pepper, paprika, or garlic powder or rubs such as a fiesta rub, all of which I use for added flavor.
The next step is to prepare vegetables. Most recipes recommend preparing sliced onions, bell peppers and jalapenos along with the meat, while others have added toppings like grilled corn, avocado or even pineapple. I usually use corn and avocado since they help enhance the flavor of the protein that I use.
Next, grill the protein at 225 degrees and cook it until it is tender and juicy with times around an hour for shrimp and up to 12 hours for pulled pork and brisket, flipping it occasionally to ensure even cooking. When it comes to cooking the vegetables, I find it best to grill them until they are slightly charred and caramelized which will yield a great result every time.
After everything is set, it is time to put the tacos together. It is best to warm up the tortillas on the grill or in a pan for around 20 seconds, then add the meat, vegetables and any additional toppings such as cheese, sour cream, cilantro or hot sauce. I love adding cheese and sour cream since it will melt into the taco.
The final step is to enjoy this easy and great tasting meal.
